For our chickpea salad:
- 3 cups of chickpeas
- 1/2 cup of green corn;
- 1 cup of peas;
- 1 cup of carrots cut into cubes;
- 1/2 cup green pepper cut into cubes;
- 1 cup red pepper cut into cubes;
- 1/2 medium onion cut into cubes;
- parsley to taste.
Salad dressing:
- black pepper to taste;
- salt to taste;
- 1 tablespoon of mustard;
- 1/2 tablespoon of olive oil;
- 2 tablespoons of apple cider vinegar.
How to prepare:
- Cut the peeled carrot into cubes and cook until al dente. Cook the chickpeas in a pressure cooker for 15 minutes, drain and set aside to cool.
- Cut the peppers into cubes, as well as the onion.
- Add all the sauce ingredients, mix well and set aside.
- Add all the salad ingredients, except parsley, mix the dressing and refrigerate. When serving, add the fresh parsley.
