Chickpea salad recipe

For our chickpea salad:

  • 3 cups of chickpeas
  • 1/2 cup of green corn;
  • 1 cup of peas;
  • 1 cup of carrots cut into cubes;
  • 1/2 cup green pepper cut into cubes;
  • 1 cup red pepper cut into cubes;
  • 1/2 medium onion cut into cubes;
  • parsley to taste.

Salad dressing:

  • black pepper to taste;
  • salt to taste;
  • 1 tablespoon of mustard;
  • 1/2 tablespoon of olive oil;
  • 2 tablespoons of apple cider vinegar.

How to prepare:

  • Cut the peeled carrot into cubes and cook until al dente. Cook the chickpeas in a pressure cooker for 15 minutes, drain and set aside to cool.
  • Cut the peppers into cubes, as well as the onion.
  • Add all the sauce ingredients, mix well and set aside.
  • Add all the salad ingredients, except parsley, mix the dressing and refrigerate. When serving, add the fresh parsley.
