Chickpea stew

For our chickpea stir-fry:

  • 250 grams of chickpeas;
  • 1 small eggplant;
  • 100 grams of pods;
  • 1 zucchini;
  • 1 white onion;
  • 4 Italian tomatoes;
  • 2 garlic cloves;
  • salt to taste;
  • Black pepper.

How to prepare:

  • Wash all ingredients well. Leave the chickpeas to soak overnight.
  • The next day, drain and cook in a pressure cooker with water for 40 minutes.
  • Meanwhile, cut the zucchini into small cubes, as well as the eggplant. Sauté the zucchini in a pan with olive oil, then add the eggplant and set aside.
  • In a non-stick frying pan sauté garlic and onion, then add peeled and diced tomatoes.
  • Cover and let it cook well. Add the reserved zucchini and eggplant and the green beans cut into strips.
  • Let it cook for 5 minutes with the lid on. Add seasonings, cooked and drained chickpeas, adjust seasoning if necessary and serve.
