For our chayote soufflé:
- 4 cooked chayotes
- 1 cup of milk
- 1 tablespoon of butter
- 1 tablespoon of wheat flour
- 4 gems
- 4 tablespoons of grated Parmesan cheese
- salt to taste
- black pepper to taste kingdom

- 50 g of grated parmesan cheese
How to prepare:
- In a bowl, mash the cooked chayotes.
- Pass through a sieve to remove the liquid, set aside.
- In a blender, beat the milk with the butter and wheat flour.
- Add the reserved chayote, egg yolks, grated parmesan cheese, salt and black pepper, beat well.
- Separately, beat the egg whites until stiff.
- In another bowl, combine the mixture from the blender with the beaten egg whites.
- Stir gently.
- Transfer to a buttered and floured bowl.
- Add the grated Parmesan cheese and bake in a preheated oven (180° C) for about 25 minutes.
