For our escabeche recipe:
- 1 kg of cleaned and opened sardines with bones (calcium)
- 1 cup of vinegar of your choice
- 1 cup of sunflower oil or olive oil
- 2 sliced onions
- 2 sliced tomato
- salt to taste
- Black pepper, pinch
- Chopped chives
- 3 cloves of garlic (large) in slices
- 3 bay leaves
- Olives for garnish and endive for garnish
How to prepare our recipe:
- Leave the sardines seasoned with salt and crushed garlic to marinate for 15 minutes while you prepare the ingredients.
- Arrange in the pressure cooker as if you were making lasagna.
- Layer of onion, then sardines (pinch of salt), then tomatoes, then onion, then sardines, then tomatoes, etc.
- Finally, add the glass of vinegar and the glass of oil.
- Pressure cook for 20 minutes, on low heat.
