For our carreteiro rice:
- 3 cups of rice
- 500 g of dried meat
- 200 g sliced bacon
- 200 g of pepperoni
- 1 large, very ripe tomato
- 1 large onion
- pepperoni pepper
- Parsley
- Sal
How to do it:
- Cook the dried meat in a pressure cooker, remove, wait for it to cool and shred.
- Reserve.
- Remove the skin from the pepperoni and cut into cubes along with the bacon.
- Cut the tomato into small cubes without the seeds as well as the onion.
- Reserve.
- Sauté the bacon and pepperoni until golden, then add the onion, tomato, pepperoni and shredded meat.
- After adding the rice, drown it well, add the water, adjusting the salt if necessary and lower the heat, waiting for it to dry.
- When ready, place the parsley on top.
